Pizza Mac (2-11-2020)

  • 3 cups macaroni (uncooked)
  • 2/3 cup milk
  • 1 egg
  • 1 teaspoon salt
  • spaghetti sauce
  • pepperoni
  • green peppers
  • onions
  • mushrooms
  • Mozzarella cheese
  • Parmesan cheese

Cook macaroni, drain.  Beat and egg, add milk and salt.  Mix together with the cooked macaroni.  Place the macaroni mixture in a 9″ x 12″ baking dish.  Top with small jar of sauce, pepperoni, green peppers, onions, mushrooms and finally, the cheeses.  bake 30 minutes at 350 degrees.  Let sit five minutes before serving.

Poor Man’s Beef Stroganoff (2-4-2020)

  • 1 lb. ground beef
  • 1/2 cup chopped onion
  • 4 oz. can drained mushrooms
  • 2 tablespoons flour
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 10.5 oz. can condensed cream of chicken soup
  • 8 oz. carton of dairy sour cream
  • cooked noodles or rice

Cook ground beef and onions in a skillet and drain off grease.  Add mushrooms, flour, paprika and salt.  Stir in soup and sour cream and cook three to five minutes.  Serve over cooked noodles or rice.  Serves 4.

May have to use a little water with the soup if cooked on the stove.  Can be made in the microwave oven.  This recipe can be cut in half for two people.  I sometimes leave out the sour cream and add just a little water with the soup to make a nice gravy.  This is a quick, easy recipe.

Double Chocolate Pecan Clusters (1-28-2020)

  • 1/3 cup butter or margarine
  • 6 oz. package semi-sweet chocolate chips
  • 4 oz. (large) package marshmallows (about 16)
  • 1 tablespoon unsweetened cocoa
  • 2 cups coarsely chopped pecans (8 oz.)

In top of double boiler melt butter, chocolate chips and marshmallows.  Stir in cocoa after melted.  Remove from heat, stir in pecans.  Line 2 cookie sheets with waxed paper.  Drop mixture by teaspoonfuls onto paper.  Refrigerate for 2 hours.  Makes 3 dozen.  You may microwave first 3 ingredients in microwave bowl.

Savory Cheese Soup (1-21-2020)

  • 3 – 14 oz. cans chicken broth
  • 1 small onion, chopped
  • 1 large carrot, chopped
  • 1 celery rib, chopped
  • 1/4 cup chopped sweet red pepper
  • 1/3 cup all-purpose flour
  • 1/3 cup cold water
  • 8 oz. cream cheese, cubed and softened
  • 2 cups shredded cheddar cheese
  • 12 oz. can beer, optional

In slow cooker, combine broth, onion, carrot, celery and red pepper.  Cover and cook on low 7 to 8 hours.  Combine flour and water until smooth; stir into soup.  Cover and cook on high 30 minutes longer until soup is thickened.  Stir in cream cheese and cheddar cheese until blended.  Stir in beer if desired.  Cover; cook on low until heated through.

Healthier Broiled Tilapia Parmesan (1-14-20)

  • 1/2 cup grated Parmesan cheese
  • 3 Tablespoons light mayonnaise
  • 2 Tablespoons butter, softened
  • 2 Tablespoons fresh lemon juice
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried basil
  • 1/8 teaspoon celery salt
  • 1/8 teaspoon onion powder
  • 2 pounds tilapia fillets


1. Preheat oven broiler. Line a shallow baking pan with foil.

2. Stir together cheese, mayonnaise, butter, and lemon juice in a small bowl. Stir in pepper, basil, celery salt, and onion powder until well combined.

3. Arrange fillets in a single layer on prepared pan. Broil 4 to 5 inches from heat source, about 2 minutes. Turn fillets over; broil 3 minutes more. Remove from oven, then spread cheese mixture on fillets. Continue broiling until fish flakes easily with fork, about 2 minutes. If desired, garnish with fresh sage leaves.

Grilling Option:

Preheat an outdoor grill to high heat (450 degrees to 650 degrees) and lightly oil grate. Grill fillets, covered and turning once, 2 to 3 minutes per side. Spread with cheese mixture, then continue grilling until fish flakes easily with a fork, about 2 minutes.


Ambrosia Cake (1-7-2020)

  • 1 yellow cake mix with pudding
  • 1/2 cup vegetable oil
  • 4 eggs
  • 1 can mandarin oranges, do not drain


  • 8 oz. carton Cool Whip
  • 1 small can pineapple,  do not drained (I use tidbits)
  • 1 small package instant vanilla pudding

Beat together; pour into greased and floured 9″ x 13″ pan or 8″ round pans.  Bake at 350 degrees until done (30-35 minutes for round).  Cool.

Frosting:  Stir together until well blended.  Spread over cool cake.  Keep in refrigerator.

Ritz Cracker Cookies (12-31-2019)

  • 1 cup chopped dates
  • 1 can Eagle brand milk
  • 1/2 cup nuts (optional)

Cook dates and milk until thick.  Add nuts.  Spread on Crackers and bake 5 minutes at 350 degrees.


  • 1 cup powdered sugar
  • 3 oz. package cream cheese
  • 1 teaspoon vanilla
  • 1 tablespoon butter

Blend until smooth and creamy.  Frost cookies.  Fix frosting first so it is ready to spread on cookies when they come from the oven (I let them cool first).  Makes 65-70.

I use this frosting:

  • 1 lb. powdered sugar
  • 1/3 cup butter
  • 1/3 cup cream
  • 1 teaspoon vanilla or coconut flavoring. (I use coconut)

Super Salad (12-24-2019)

  • 1 head cauliflower
  • 1 bunch broccoli
  • 1 cup diagonal sliced celery
  • 1 cup frozen peas
  • 1/2 lb. bacon, fried crisp and crumbled
  • 2 teaspoons green onion tops
  • 1 can water chestnuts, drained and sliced

Mix and cover.  Place in refrigerator while making dressing.


  • 2 cups mayonnaise
  • 1/4 cup sugar
  • 1/4 cup Parmesan cheese
  • 2 teaspoons vinegar
  • dash of salt
  • 1 teaspoon finely chopped white onion

Toss together at least 1 hour before serving.

Cheddar Ham Quiche (12-17-19)

  • 1 T. vegetable oil
  • 1 1/2 c. cooked ham, cube
  • 1/2 c. finely chopped green pepper
  • 1 T. chopped pimento
  • 1 1/2 c. (6 oz.) cheddar cheese
  • 3 eggs, slightly beaten
  • 2 c. half & half
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • dash of nutmeg
  • 10″ pie crust


Preheat oven to 400 degrees. Do not prick pastry shell. Bake 7 minutes. Remove from oven and set aside. Reduce oven heat to 375 degrees. Heat oil in medium skillet. Add ham, green pepper and pimento. Cook over medium-high heat until green pepper is tender, stirring occasionally. Drain ham mixture. Sprinkle cheese, then ham mixture in pastry shell. In medium bowl, combine eggs, half & half, salt, pepper and nutmeg. Beat with fork or whisk until well mixed, but not frothy. Pour egg mixture over ham, ect. in pastry shell. Bake 45 minutes, or until knife inserted off center comes out clean. Let stand 10 minutes before serving. Yields 6 servings, 10″ pie.

Ramen Chinese Cabbage Salad (12-10-2019)

  • 1/2 cup salad oil
  • 3 tablespoons sugar or 2 packages Equal
  • 3 tablespoons vinegar
  • 1 package seasoning mix from Ramen noodle package (pork, chicken or beef)


  • 3 green onions, sliced
  • 1/2 head cabbage, shredded
  • 2 carrots, shredded


  • 3/4 cup slivered almonds
  • 2 tablespoons sesame seeds, toasted
  • 1/4 cup sunflowers seeds
  • 1 package of Ramen noodles, crushed

Prepare in three parts and toss together before serving.  Best freshly made – most crunchy, but good the next day if it lasts that long!
