Italian Chicken Cutlets (7-26-2016)

  • 6 skinned breast halves
  • 1 cup seasoned Italian bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 envelope Italian salad dressing mix
  • 2 teaspoons dried oregano
  • 1/4 teaspoon garlic powder
  • 2 large eggs, beaten
  • 1/3 cup vegetable oil

Combine bread crumbs, cheese, dressing mix, oregano and garlic.  Dip chicken in beaten eggs, then bread crumb mixture.  Heat oil in a large skillet.  Add chicken.  Cook on each side until golden brown, adding extra oil if needed.
